How Glycemic Load Is Calculated

Glycemic load is the product of the glycemic index (GI) and the amount of available carbohydrate in a serving, divided by 100:

GL = (GI × available carbohydrate in grams) ÷ 100

GI is a relative ranking of how quickly a food raises blood glucose compared with pure glucose, but it says nothing about portion size. Glycemic load corrects that by factoring in how much carbohydrate you actually eat. A GL under 10 is low, 11–19 is medium, and 20 or more is high.

To get “available carbohydrate,” the calculator lets you subtract fiber from total carbohydrate, because fiber is not digested into glucose. When the “Subtract fiber” box is checked, the calculator uses the selected variety’s default fiber value unless you enter a custom one.

Worked Example

Suppose you eat 60 g of classic chickpea hummus. The calculator uses 14.3 g total carbs per 100 g and 6.1 g fiber per 100 g for classic hummus, giving 8.2 g available carbs per 100 g after removing fiber. Your serving has (8.2 ÷ 100) × 60 = 4.92 g available carbohydrate. With a GI of 6, the glycemic load is (4.92 × 6) ÷ 100 = 0.3 — a very low GL.

Even a generous 100 g serving of the same hummus only produces a GL of about 0.5. White bean hummus, with a higher GI, yields a somewhat larger but still modest number.
